Ingredients
Salad
2 cups red cabbage, thinly sliced
1 cup shredded carrots
1 green apple, thinly sliced
1/2 cup chopped parsley, chopped (optional)
sprinkle of sunflower seeds (optional)
pickled red onions (optional)
chopped chives for garnish (optional)
Dressing
2 tbsp olive oil
1 tbsp apple cider vinegar (or sub w/ red wine vinegar)
1 tsp Dijon mustard
1 clove garlic minced
1 tsp honey (optional)
Salt & pepper
Instructions
1. Combine cabbage, carrots, apple, and parsley in a bowl.
2. Whisk dressing ingredients in a small bowl.
3. Toss dressing with slaw and sprinkle seeds on top.
4. Chill 15 mins before serving to allow the cabbage to soften.
