Ingredients
Garlic Lime Chicken Marinade
2 chicken breasts
3 cloves garlic, minced
Juice of 1 lime
1/4 cup low sodium soy sauce
1 tsp black pepper
Rice Paper Rolls
6-8 rice paper wrappers
1 cup mixed greens or shredded red cabbage
1 cucumber, julienned
Shredded carrots
Fresh mint (optional)
Cooked Garlic-Lime Chicken (from above, optional)
Light Peanut Dipping Sauce
2 tbsp peanut butter or PB powder
1 tbsp low sodium soy sauce
1 tsp lime juice
1 tsp honey or maple syrup
Water to thin (as needed)
Instructions
Garlic Lime Chicken Marinade
Mix garlic, lime juice, soy sauce, and pepper in a bowl.
In a Ziploc bag, marinate the chicken for 15-30 minutes, or overnight for more flavor.
Cook chicken in a skillet over medium heat for 4-5 minutes per side (until internal temperature reaches 165°F).
Let the chicken rest, then slice it thinly for the rolls.
Rice Paper Rolls
Prepare veggies by slicing the cucumber, carrot, and fresh herbs.
Soften the rice paper by dipping each sheet in warm water for 10-15 seconds.
Lay each rice paper flat and add mixed greens, veggies, fresh herbs, and sliced chicken.
Fold in the sides and roll tightly.
Slice and serve with a dipping sauce!

Mix all ingredients together in a small bowl.
Add water to reach your desired dipping consistency.
