Ingredients

  • 2 cups plant milk (vegan or not)

  • 1/2 cup date syrup, or maple (adjust to taste)

  • 4 tbsp nut butter

  • 1 tsp vanilla extract

  • 1/2 cup cocoa powder

  • 2 1/2 cups rolled oats (blended into flour or use oat flour)

  • 1 tsp baking powder

  • Pinch of salt

  • 1/2 to 3/4 cup chocolate chips (vegan or not)

  • 1/2 ripe banana, mashed (optional)

  • Optional: 1 scoop plant protein powder and extra milk for consistency

Instructions

  1. Preheat the oven to 350°F (180°C). Line an 8x8" baking dish with parchment paper.

  2. Blend oats into flour if needed.

  3. In a bowl, whisk together plant milk, nut butter, maple syrup, and vanilla.

  4. Add cocoa powder, oat flour, baking powder, and salt. Stir until smooth. If too thin, add more oat flour.

  5. Stir in mashed banana (if using) and chocolate chips.

  6. Optionally, add protein powder and extra milk for consistency.

  7. Pour batter into the dish and top with extra chocolate chips.

  8. Bake for 30-35 minutes, until a toothpick comes out clean.

  9. Cool for 10 minutes, then remove and slice into squares.

  10. Store in an airtight container at room temp for 4-5 days or refrigerate.

Tip: Microwave for 20 seconds for a warm, gooey treat!
